Endive and Avocado Salad

1	3	endive lettuce heads chopped or mixed salad greens
2	3	ripe avocado’s chopped chunks
3	1/4C	lemon juice
4	1/4C	olive oil
5	2 tbsp	Dijon mustard (optional)
6	½ tsp	pepper
7		Salt to taste

Directions

Whisk lemon juice, etc. and pour over lettuce and avocado and serve.
